Ingredients
- 1 whole chicken
- ¼ c. lime juice
- 4 oz. dark rum
- 2 Tbsp olive oil
- 2 Tbsp soy sauce
- 2-4 cloves garlic, minced
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- 1 tsp hot sauce
- 1 can cola
Preparation
- Combine 1oz rum, lime juice, olive oil, soy sauce, garlic, cinnamon, ginger and hot sauce in a small bowl.
- Cover chicken with marinade and refrigerate for a minimum 1 hour.
- Preheat the oven to 400F.
- Reserve half the can of cola, and place the can in the center of a deep baking dish.
- Position the chicken over the can, sitting on its legs.
- Pour half the remaining rum and cola in the bottom of the dish.
- Roast chicken in the oven for 30 minutes.
- Add the remaining rum and cola, basting the chicken.
- Reduce heat to 350F and roast until the juices of the chicken run clear, about 30 minutes.
- Remove from the oven, discard the pop can and serve.
